Cauliflower Fried “Rice”

[v] [lf] [t] This recipe is ingenious. I LOVE fried rice but it’s so addicting and usually I over eat. But with this recipe you use cauliflower instead of rice and you can eat it forever without getting full! And it’s super easy. And it tastes just like fried rice.

Avocado Pasta Sauce

[v] [lf] [e] This is easily one of my favorites. It takes less than 20 minutes to make and it’s delicious and healthy. You need a food processor – an immersion blender might work.

[v] [lf] [t] This soup is incredible. It takes a little while to make but the ingredients are simple and cheap, and it makes a TON – the perfect Sunday soup that you can eat all week.

Sushi Bowl

[v] [e] [lf] A classic in our house. The sauce for this baby is absolutely addicting. I guess that’s mayo for you. But seriously, just chop some veggies, cook some rice, and you’re good to go.

Lentil and Goat Cheese Stuffed Sweet Potatoes

[vn] [e] Super, super easy (and cheap!). These can be lactose free without the goat cheese, or a cheaper feta could be substituted. You could also make a smaller batch for one or two people.
